This is a stunning wine from Tim Adams in the Clare Valley in South Australia. The Tim Adams winery is next door to famous Clare Valley producer Wendouree. From the 2007 vintage and now 19 years’ of age, this cabernet sauvignon has taken on an ethereal mature blackcurrant and herbal character. The palate has long dreamy length, with flavours of blackcurrant and a little eucalyptus. The tannins are fully resolved and elegant. This wine reminds of aged left bank Bordeaux and in some respects early vintages of Penfolds Bin 707 cabernet sauvignon. Review Rating: Outstanding (★★★★★, 96 points). Website: Tim Adams Wines.
