This wine review is in two parts. The first is a comment on the wine. The second part is a comment on how this wine evolved under a Coravin device. First, the wine. This is a good cabernet sauvignon blend from ColleMassari in Tuscany in Italy. The blend is 50% cabernet sauvignon, 20% merlot, 20% cabernet franc and 10% Sangiovese. I think of Bolgheri as like a Bordeaux in the best vintages. This particular wine is sound. It has aromas of capsicum and blackcurrants. The palate has firm tannins and is dark fruited. Drink it over the next 5 to 7 years.
Second, the Coravin. The wine was left for about 4 months with the gap sealed by argon injected through the cork via a Coravin device. The result in this case was about 85% true to the original. A savoury and drier, sour cherry character emerged. It’s almost like the Coravin helped along an effort to highlight the Italian origin of the wine. Less welcomely, some oxidative and tired characters also presented. While better than every other option for storing opened bottles, I think it’s a better option for “weeks” rather than months.
